This is a very interesting sake that takes advantage of the characteristics of Kochi yeast CEL24.
A sweet, easy-to-drink junmai ginjo sake with a fruity aroma of apples that spreads in the mouth, a refreshing sourness of malic acid, and a pleasantly fizzy carbonation.
A small amount of live moromi is put in the bottle, and natural carbon dioxide gas is generated by post-fermentation in the bottle.
